Raspberry Clafouti Recipe

This is an easy, delicious fruit-and-custard dessert, quick to make and quick to bake.

  • 2 fresh raspberries
  • 3 eggs
  • 1 milk
  • 1/2 flour
  • 1/2 sugar
  • 1 vanilla
  • 1/4 nutmeg
  • 1/8 salt
  • powdered sugar (optional)
Container: 10 inch pie dish
  • Preheat oven to 350°F.  Oil or butter pie dish.  Scatter raspberries in pie dish, reserving a few for garnish.
  • Beat eggs until foamy. Add remaining ingredients and mix until smooth. Pour this mixture over raspberries and bake 20 - 25 minutes, or until a knife inserted in the center comes out clean,
  • Top with reserved raspberries and, if using, a sprinkling of powdered sugar. Serve warm or cold.

"Raspberries are delicious but I make this with huge frozen organic blueberries and blackberries. I cover the entire bottom of the pan with fruit. After it is baked til puffed up and golden I serve it warm with frozen vanilla bean coconut milk ice cream. Small amount of calories compared to regular ice cream and antioxidants from the organic berries make this delicious and healthy."
