"The cylindrical variety zucchini are similar to cucumbers in color and shape but have an off-white flesh whereas a cucumber has light green flesh. It is best to use zucchini that is less than a foot long for a more tender flesh and desirable flavor. See our Zucchini glossary term for additional zucchini varieties.

Zucchini can be grilled, fried, sautéed, steamed and baked. They are eaten as a side dish on their own or as an ingredient in casseroles, soups, and appetizers. They can also be stuffed with meat and vegetables, and then baked for a light summer meal.

"I wish I would have found this group of recipes a couple of months ago when I had zucchini coming out of my ears! Some of them look really good. I froze some so maybe I can make one of the zucchini breads, or cake recipes. Will have to bookmark this for next year."
