"Potatoes are very versatile vegetables. Not only are there many different varieties but there are an unending number of ways in which to use potatoes. They can be prepared using many different cooking methods, each providing a different taste to the finished dish. They are also used as one of many ingredients in casseroles, soups, and stews. They are mashed and used in some baked goods, such as breads, lefse, and muffins. And, most of all, the versatility of potatoes provides us with a variety of recipes for adding this great tasting vegetable to our meal plan."
