Asparagus and Goat Cheese Salad Recipe

Enjoy this as a colorful side or a light entreé.
Directions
  • Snap off ends of asparagus. Lay on baking sheet, sprinkle with olive oil and lemon pepper. Place single layer on grill, grill 3 to 5 minutes, just until crisp tender, turning occasionally.
  • Remove from grill.
  • On large serving platter, arrange lettuce, top with aspargus, then chopped tomatoes. Sprinkle with salt. Crumble goat cheese over the top them sprinkle with the toasted pine nuts. Drizzle with vinaigrette just before serving. Garnish with chopped fresh basil if you desire.

- 1 pound fresh asparagus
- 3 medium tomatoes, diced
- 1 package goat cheese, crumbled
- 1/4 cup pine nuts, toasted
- 3 teaspoons olive oil
- 1 1/2 teaspoons lemon pepper
- 1 pinch salt
- 2 tablespoons favorite balsamic vinaigrette dressing or basil vinaigrette
