A flavorful dressing for a cheese tortellini pasta salad. With the combination of mayonnaise and olive oil, a light creamy dressing is created that allows the flavor from the oregano, thyme, basil, and garlic to come through to provide a burst of flavor.

Ingredients
  • 1/2 cup mayonnaise
  • 1/2 cup olive oil
  • 1/4 cup red wine vinegar or champagne vinegar
  • 1 1/2 teaspoons Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon oregano, ground
  • 1/4 teaspoon dried thyme leaves
  • 1/4 teaspoon dried basil or 1 teaspoon minced fresh basil
  • 1 clove garlic, minced or finely chopped

  • In a small bowl, whisk together dressing ingredients.
  • Chill, if not using immediately. Serve over pasta salad.
Tip: An immersion blender combines ingredients thoroughly.

"I used this dressing on elbow macaroni, onion, celery and green peppers. I followed bberg's advice and omitted the thyme and olive oil (doubling the mayo). It was good but had to add a little more sugar."
