Who doesn't love a spicy peanut sauce over chicken? These lettuce wraps have crunchy cabbage and broccoli, tender chicken and spicy sauce drizzled over to wake up those taste buds.

Ingredients
  • 12 Butter lettuce leaves
  • 1 cup cabbage , finely shredded
  • 3 cups chicken breast, cooked and diced
  • 1 cup broccoli , finely chopped
  • 1 cup carrots , shredded
  • 1/4 cup scallions , thinly sliced
  • SPICY PEANUT SAUCE:
  • 1/2 cup peanut butter
  • 1/4 cup lime juice
  • 2 teaspoons fish sauce
  • 2 teaspoons sesame oil
  • 2 teaspoons agave nectar
  • 1/4 cup water
  • 1/4 cup cilantro , minced
  • 2 cloves garlic , pressed
  • 2 teaspoons ginger , minced
  • 1 teaspoon chili powder

For Spicy Peanut Sauce:
  • In a quart jar, combine peanut butter, lime juice, fish sauce, sesame oil, agave and water. Close jar and shake well.
  • Add cilantro, garlic, ginger and chili powder and shake again until ingredients are all combined.
To assemble wraps:
  • Lay out the lettuce leaves.
  • Place a tablespoon of Napa cabbage into each leaf.
  • Add 1 tablespoon each of chicken, broccoli, carrots and scallions on top of cabbage.
  • Drizzle with Spicy Peanut Sauce.

"The sauce was really good. I would have liked them better if the chicken was seasoned a little bit with some Asian flair. I will make them again, but maybe with an Asian marinated chicken."
