Blue Cheeseburgers Recipe

  • 1 small onion, very finely chopped
  • 1/2 dry white wine
  • 1 garlic, minced or pressed
  • 1 stock or broth
  • 1/2 crumbled blue cheese, about 2 oz.
  • 1 ground meat: beef, lamb, turkey, or pork
Container: saucepan, grill or skillet
  • In a wide pan (to speed reduction), boil onion, garlic, and wine until liquid is almost gone. Add stock and boil down to about 1/2 cup. Remove from heat, add cheese, and stir until sauce is smooth. Taste for seasoning.
  • Shape meat into 4 patties. Salt very lightly, since the sauce is quite salty. Grill or pan-broil the burgers. Serve hot with sauce spooned over.
