Chocolate Chip Zucchini Bread Recipe

Moist zucchini quick bread, loaded with chocolate chips and nuts.

Ingredients
  • 3 eggs
  • 1 3/4 cups white sugar
  • 1 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 2 cups zucchini, peeled and grated
  • 1 cup nuts (walnuts or pecans)
  • 1/2 cup mini chocolate chips
  • 1 tablespoon fresh lemon zest
  • 3 cups all-purpose flour
  • 1/4 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
Container: 2 - 9" x 5" bread pans

  • Preheat oven to 350º F. Grease and lightly flour bread pans.
  • In a medium bowl, mix together flour, baking powder, baking soda, salt and spices. Set aside.
  • In another  large bowl, beat eggs until light in color. Gradually add sugar and continue beating. Stir in vanilla, zucchini, oil, nuts, chocolate chips and fresh lemon zest.
  • Fold in dry ingredients until combined and then pour batter in 2 prepared bread pans.
  • Bake 50-55 minutes or until done. Remove bread from pans to cool.
