Garlic Roasted Cauliflower Recipe

Ingredients
  • 1 head cauliflower, trimmed and cut into large florets
  • 4 cloves garlic, minced
  • 4 1/2 tablespoons olive oil - divided
  • 2 1/2 teaspoons salt - divided
  • 1 teaspoon ground black pepper
  • 2 teaspoons fresh lemon juice
  • 3 tablespoons pine nuts, toasted (optional)

Preheat oven to 450 degrees.

On a rimmed baking sheet, toss the cauliflower with the garlic, 3 tablespoons olive oil, 2 teaspoons salt and black pepper. Spread into a single layer and roast, stirring twice, until the cauliflower is tender and the garlic is lightly browned, 20-25 minutes.

Transfer the cauliflower to a large bowl. Add the remaining olive oil, lemon juice and pine nuts, if desired. Sprinkle with 1/2 teaspoon salt, toss well and serve hot or warm.

For all you cauliflower fans, roasted cauliflower will be a new favorite. A whole new flavor is brought out especially with the garlic in the background.
