GOURMET BAKED ACORN SQUASH 2 Recipe

Ingredients
  • 3 acorn squash, halved and seeded
  • 2/3 cup diced celery
  • 1 1/2 cups diced, unpeeled apples
  • 1/4 cup margarine
  • 1 1/2 cups soft bread crumbs
  • 1 cup grated cheese
  • 1/2 teaspoon Salt
  • 1/8 teaspoon pepper
Directions
Place squash halves, cut side down, in baking pan in small amount of water. Bake at 400° for twenty to thirty minutes or until almost tender. Sauté celery and apples in margarine in skillet for five minutes; stir in crumbs, cheese, salt and pepper. Turn squash halves; fill with apple mixture. Bake ten to fifteen minutes longer or until squash halves are tender.
