Pioneer Chicken & Noodle Soup Recipe

Ingredients
  • chicken
  • mashed potatoes
  • egg
  • flour
  • salt
Directions
Boil chicken including the bones and a dash of salt. Whip up the egg with 1/4 t. salt and add enough flour to make a dough ball. With a rolling pin, roll the ball as flat as possible, then sprinkle with flour. Fold over and roll thinner. Sprinkle with flour again, enough so the layers do not stick together,and fold over again. Roll the whole thing as thin as possible and then unfold the dough. Then roll the dough into a tight snake shaped roll and slice crosswise as thin as possible. Remove all bones from the chicken broth and bring to a boil. Toss the noodle rolls so they are completely unrolled and then toss them in the boiling broth. Boil about 7 minutes. Serve on top of mashed potatoes.
