"I used a rotisserie chicken to take the easy way out. This was great. I freeze individual containers of soup for my lunches and it freezes well, too."

"There is nothing like homemade chicken noodle soup when it is cold out. This recipe was great. I did add more chicken and broth to what was called for but otherwise I pretty much followed this recipe."

"Generally, this recipe was good and worked well. The taste was good and the method was sound. However, the portions are a bit off. There's no way this serves six. We got three portions out of it. Also, 6 oz of chicken breast is tiny. I used a single 11 oz chicken breast. Also, I'd double the stock quantity to 2L. For us there was very little broth at all, it had all simmered away or been absorbed into the noodles and vegetables. I'm sceptical about needing 40 mins to bake a single chicken breast but as I cooked it in a cast iron pot instead, I couldn't say for sure. It didn't take more than 10 mins to cook through."

"I made this after work last night. Doubled it for left overs. Make sure to use a good stock, makes a big difference. This was very easy and the kids liked it alot. Not sure what the olive oil does for it but it worked!"
