Corn, Red Pepper and Onion Soup Recipe

Ingredients
  • 2 tablespoons butter
  • 2 cups Frozen Corn
  • 1/8 teaspoon white pepper
  • 1 onion, chopped
  • 6 cups chicken broth
  • 1/8 teaspoon cayenne pepper
  • 1 red pepper, chopped
  • 1/2 teaspoon Salt
  • 2 tablespoons parsley, chopped
Directions
Heat butter in large skillet and cook chopped onions until soft, about 5 minutes. Add chopped red pepper and cook 5 more minutes. Add corn and cook 3 minutes. Add chicken broth and bring to boil. Reduce heat and simmer uncovered for 3 minutes. Pour into a food processor or blender and process until smooth. Return to a saucepan and add cream, salt, white pepper, cayenne pepper and chopped parsley. Heat.
