Summer fare should always be light and simple. Making use of fresh garden vegetables marinated with your favorite Italian or other oil-based dressing (about 30 minutes) and grilled until tender, compliments a juicy rib eye steak and makes for a quick meal after a long day on the job.
Directions
Wash, peel, and slice 1 medium zucchini and 1 medium yellow squash into strips approx. 1/4 inch thick. Wash and thoroughly clean mushrooms. Place ingredients in shallow glass baking dish and pour dressing over vegetables; cover and marinate in your refrigerator for about 30 minutes. After 30 minutes remove vegetables to a clean platter and add a dash of salt/pepper before putting them on the grill for about 10-15 minutes, making sure to turn them until tender.
