MICROWAVE TURKEY & SPINACH MANICOTTI Recipe

Ingredients
  • 1 1/2 pounds ground turkey breast
  • 1 package frozen spinach, thawed and squeezed (10 ounce pkg)
  • 1 teaspoon Italian seasoning
  • 1/4 teaspoon salt and pepper
  • 1 jar no salt added marinara sauce (26 ounce jar)
  • 14 manicotti shells
  • 1 can low sodium chicken broth (14 ounce can)
  • 1 cup Mozzarella cheese, shredded
  • 1/2 cup Parmesan cheese
Directions
In a large bowl, mix together turkey, spinach and seasonings. Spread 1/2 of the marinara sauce in a 10 inch square or 9 x 13 inch baking dish. Fill uncooked manicotti shells with the meat mixture; then place in baking dish. You may have to squeeze them in to fit. Pour chicken broth and remaining marinara sauce evenly over the manicotti. Gently press shells into the liquid. Cover and microwave on high (100%) for 25 minutes. Sprinkle with Parmesan cheese.

Note: Make a day ahead, cover and refrigerate overnight. Add 5 minutes to cooking time. Makes 14 pieces.
