Freezing Corn Recipe

"I froze this corn this fall and brought corn to our Thanksgiving meal. I guess I should have brought more since there wasn't a kernel left...."

Ingredients
  • 9 cups raw corn
  • 2 teaspoons canning salt
  • 1/2 sugar
  • 2 cups water
  • 1 box freezer bags
Container: 5 quart pot

  • Cut corn kernels off cob.
  • Add all ingredients to 5 quart pot; bring to boil.
  • Cool corn mixture and then add desired amount into sealable freezer bags.
  • Place in the freezer immediately.
Have sweet corn year round by making it up in advance and putting it in the freezer. It will be worth that little bit of effor when the corn is in season to enjoy throughout the year. Serve this vegetable at your holiday meal.
