Quick Cottage Cheese Dill Bread Recipe

Ingredients
  • 2 1/2 cups whole wheat pastry flour (or 1 1/4 cup whole wheat flour and 1 1/4 cup unbleached white flour)
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 3/4 teaspoon salt
  • 2 tablespoons minced fresh dill
  • 1/4 cup Oil
  • 1/4 cup honey
  • 3/4 cup Milk
  • 1 egg, well beaten
  • 1 cup cottage cheese
Directions
In a large bowl, mix the flour, baking powder, baking soda, salt, & dill. In a small saucepan, combine the oil and honey and heat until just blended. Remove from heat and stir in the milk, beaten egg, & cottage cheese. Pour this mixture into the flour mixture and beat just until combined. Do not over beat. Scrape into a buttered and floured loaf pan and press down the batter with a rubber spatula to prevent any air pockets from forming. Smooth over the top, then give the pan a good thump on your counter. Bake at 375° for 45-50 minutes, until golden. Cool for 10 minutes on a wire rack, then remove bread from pan and continue cooling for an hour before slicing. Makes one loaf
