| | Directions | | In a large bowl, mix the flour, baking powder, baking soda, salt, & dill. In a small saucepan, combine the oil and honey and heat until just blended. Remove from heat and stir in the milk, beaten egg, & cottage cheese. Pour this mixture into the flour mixture and beat just until combined. Do not over beat. Scrape into a buttered and floured loaf pan and press down the batter with a rubber spatula to prevent any air pockets from forming. Smooth over the top, then give the pan a good thump on your counter. Bake at 375° for 45-50 minutes, until golden. Cool for 10 minutes on a wire rack, then remove bread from pan and continue cooling for an hour before slicing. Makes one loaf |
