The taste of the islands is in this delicious coleslaw variation featuring lime juice, cilantro, and chopped red pepper.

Coleslaw with Lime & Cilantro Recipe (+)

Directions

In a serving bowl, combine coleslaw, cilantro, and red pepper.

In a separate small bowl, blend together oil, lime juice, cumin, salt and pepper. Pour dressing mixture over coleslaw mixture.

Cover and chill 1 to 2 hours before serving.

Garnish with sliced almonds, if desired.

		COLESLAW
-		16 ounces coleslaw mix
-		1/2 cup lightly packed cilantro leaves, coarsely chopped
-		1/2 cup sweet red pepper, chopped
		DRESSING
-		1/4 cup canola oil
-		3 tablespoons fresh lime juice (approximately 1 lime)
-		3/4 teaspoon ground cumin
-		1/2 teaspoon salt
		freshly ground black pepper
		GARNISH
		sliced almonds, if desired
