Citrus Zucchini Bread Recipe

Ingredients
  • 3 eggs
  • 1 3/4 cups white sugar
  • 1/2 cup vegetable oil
  • 1/2 cup unsweetened applesauce
  • 2 teaspoons vanilla extract
  • 2 cups zucchini, grated
  • 1 cup nuts, chopped
  • 1 tablespoon fresh orange or lemon zest
  • 3 cups all-purpose flour
  • 1/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 3/4 cup raisins (opt)
  • 1 teaspoon baking powder
Container: 2 - 9" x 5" bread pans

  • Preheat oven to 350º F.
  • Grease and flour bread pans.
  • In a large bowl, beat eggs until fluffy. Gradually add sugar until blended. Add oil, apple sauce, vanilla, zucchini, nuts and zest. Beat mixture until well combined. Stir in remaining ingredients.
  • Pour batter into prepared pans. Bake about 50-60 minutes or until done.
  • Remove from pans and cool.
With your choice of orange or lemon flavoring, this moist zucchini bread is given an interesting, flavorful twist.
