FRIED SUMMER SQUASH 2 Recipe

Ingredients
  • 5 Yellow Squash
  • 1 tablespoon canola oil
  • 1 tablespoon butter
  • 1 cup sautéed dice onions
  • salt and ground pepper to taste
  • 1 teaspoon fresh rosemary leaves, finely chopped
Directions
Slice squash, In large skillet, saut squash in oil and butter. When lightly brown, add onions. Season with salt and pepper. Cook over medium heat 3 more minutes, but do not let squash get to mushy. Sprinkle with rosemary, and keep warm until served.

Serves 4.
