Yellow Squash Side Dish Recipe

  • 2 Eggs
  • 1 cup cottage cheese
  • 1 tablespoon minced onion
  • 2 tablespoons flour
  • 2 teaspoons chicken bouillon granules
  • 8 cups sliced yellow squash, cooked and drained
  • 1 cup shredded cheddar cheese
  • 6 slices bacon, cooked crisp (crumbled)
In a large bowl, combine eggs, cottage cheese, onion, flour and bouillon. Add squash and mix well. Pour mixture into an 11x7" or 9x13" baking dish. Top with Cheddar cheese and bacon. Bake at 350° for 25 minutes. Let stand 5 minutes before serving. Makes 6 servings.
