Roasted Red Potatoes 4 Recipe

  • 1 pound small red potatoes (5-6)
  • 1 tablespoon olive or vegetable oil
  • 1/2 teaspoon Salt
  • 1/8 teaspoon pepper
  • 2 tablespoons grated Parmesan cheese
Cut the potatoes into 1/4 inch thick slices; toss with oil. Place in single layer in a greased 13x9x2-inch baking pan. Sprinkle with salt, pepper and Parmesan cheese. Cover tightly with foil. Bake at 350° for 40 minutes or until tender. Serves 4, 117 calories. Easy to do.
