Pimento Potatoes Recipe

Ingredients
  • 4 cups potatoes
  • 4 tablespoons butter
  • 1 onion , finely chopped
  • 2 pimentos ,cut into small pieces
  • 4 tablespoons flour
  • 1 cup rich milk
  • 1 cup water
  • 1/2 teaspoon Salt
  • 1/8 teaspoon white pepper
  • 1 cup grated cheese
Directions
Cube potatoes and parboil with onion in salted boiling water for 10 minutes.

Add pimentos and cook 5 minutes longer and drain.

Make a cream sauce of butter, flour, milk, salt and pepper. Add cheese to sauce. Place a layer of the sauce on the bottom of a buttered baking dish, Add1/2 of the potatoes and cover with another layer of sauce. Add the remaining potatoes and cover with sauce.

Bake at 350 degrees until the potatoes are tender.
