Cube potatoes and parboil with onion in salted boiling water for 10 minutes. Add pimentos and cook 5 minutes longer and drain. Make a cream sauce of butter, flour, milk, salt and pepper. Add cheese to sauce. Place a layer of the sauce on the bottom of a buttered baking dish, Add1/2 of the potatoes and cover with another layer of sauce. Add the remaining potatoes and cover with sauce. Bake at 350 degrees until the potatoes are tender. |
