Lentil Soup with Potatoes Recipe

  • 1 package lentils
  • 2 quarts water
  • 2 stalks celery, diced
  • 1 onion, diced
  • 1/4 cup parsley, chopped
  • salt, to taste
  • 3 potatoes, peeled, cubed
  • 2 tablespoons margarine
  • 2 tablespoons flour
Cook together lentils, water, celery, onion, parsley and salt for 1 hour. Add potatoes the last 20 minutes. Probably need more water, celery, onion and salt.

Brown margarine and flour in a skillet. Add some of the soup gradually until liquid and smooth. Add mixture to remaining soup.
