Healthy Chicken Noodle Casserole Recipe

Ingredients
  • 4 cups egg noodles - cooked and drained
  • 2 cans condensed reduced fat cream of mushroom soup - Healthy Choice
  • 1/4 cup skim milk
  • 6 ounces cooked chicken breasts halves - chopped or shredded
  • 1 can tomatoes with green chilies - (Rotel)
  • 10 ounces frozen mixed vegetables
Directions
Preheat oven to 350°. Combine all ingredients in a large bowl. Mix well. Place into a 9 x 12" baking dish. Bake for 30 minutes. Hints: Instead of egg noodles, you can use the "No Yolks" noodles (lower in fat). Add pepper for taste. Sprinkle low fat shredded cheese on top, 5 minutes before taking out of oven. You can also add some hot sauce for a little extra kick.
