Ingredients
4 green peppers cut in half - uncooked
1 1/2 pounds Premio sausage, out of casings - uncooked
1 medium onion - finely chopped
2 eggs
2 medium zucchini - shredded
1/2 red pepper - finely chopped
1 can (14 oz.) diced tomatoes
1/2 cup grated parmesan cheese
1 tablespoon finely chopped parsley
1/2 cup black olives - chopped
2 teaspoons fennel seed (optional)
salt to taste
black pepper (as much as you like)
Directions

Combine all of the filling ingredients in a large bowl.
Fill the peppers with the mixture.
Bake at 350ºF for 1 hour.
