Sausage, Peppers, and Potatoes Recipe

  • 6 Premio sweet or hot sausage (you may wish to use a combination of both)
  • 2 large green bell peppers - cut into long slices
  • 2 red bell peppers - cut into long slices
  • 1 large yellow onion - cut into half moon slices
  • 5 large eastern potatoes - cubed
  • 2 tablespoons ground oregano
  • 1/2 tablespoon ground black pepper
  • 1 large garlic clove - diced
  • 1 cup water
  • 2 tablespoons olive oil

  • In a frying pan, parboil sausage for about 10 minutes.
  • While the sausage is cooking, mix the peppers, potatoes, and onion in a large baking dish.
  • Remove the sausage from frying pan after the 10 minutes of cooking time and add to the baking dish.
  • Add the oregano and pepper to baking dish and mix.
  • Add the olive oil and water and mix.
  • Cook at 375ºF for about 1 hour (until potatoes are soft). You may need to add water from time to time, but be careful not to add too much.
  • Serve with Italian bread.
  • Note: You may want to dice the sausage before mixing it in with the other ingredients.
