Scrumptious Carrot Cake Recipe

Ingredients
  • 1 pound or 2 1/2 cup of Dark Brown Sugar
  • 1 1/2 cups oil
  • 4 eggs
  • 2 cups flour + 1/2 cup for high altitude
  • 2 teaspoons Baking Soda
  • 1 teaspoon ground cinnamon
  • 1 cup walnuts cut up
  • 2 cups grated carrots
  • 1 cup drained, canned, chunky pineapple
  • 1 cup shredded coconut
  • 1 1/2 teaspoons salt
  • 1/4 teaspoon nutmeg
  • 1/2 cup raisins
  • Frosting
  • 1 package cream cheese, softened (8 ounce pkg)
  • 1/2 cup butter
  • dash of salt
  • 3 1/2 cups powdered sugar
  • 1 teaspoon lemon juice or lime juice and some zest
Directions
Beat brown sugar and oil for 3 minutes. Add eggs and beat. Add dry ingredients and beat. Cut up pineapple chunks a little. Add rest of ingredients and mix well.

Recipe calls for two 10" pans, but I use one 11x15" casserole pan. Cook at 350° for 35 minutes, may need to be cooked longer, just check after 35 minutes.

Top with Lime or Lemon Cream Frosting:

Combine ingredients and beat smooth. May need more juice.
