Coca Cola Cake Recipe

Ingredients
  • 2 cups Flour
  • 2 cups Sugar
  • 1/2 pound Butter
  • 2 tablespoons Cocoa
  • 1 cup Coca Cola
  • 1/2 cup Buttermilk
  • 1 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 2 Eggs
  • 1 teaspoon Vanilla
  • 1 1/2 cups miniature marshmallows
  • Icing
  • 1/4 pound Butter
  • 2 tablespoons Cocoa
  • 2 tablespoons Coca Cola
  • 1 pound Confectioner's Sugar
  • 1 cup Chopped Pecans (optional)
  • 1 teaspoon Vanilla
Directions
  • Preheat oven to 350° F.
  • Sift flour, sugar, baking soda, and salt in large mixing bowl.
  • Boil together the butter, cocoa and Coca Cola.
  • Stir into the flour mixture mixing well, but don't beat.
  • Add marshmallows. (The batter will seem thin).
  • Pour into 9"/13" baking pan (coated w/ flour or cooking spray).
  • Bake 30 - 35 minutes.
  • Cool for 10 minutes before frosting.
  • For frosting, heat the butter, cocoa and Coca Cola to boiling.
  • Add confectioner's sugar and vanilla stir until smooth.
  • Stir in nuts and spread the hot icing over the warm cake.
