Gluten Free Cowboy Cake Recipe

  • 1 3/4 cups gluten free flour blend
  • 3/4 cup stevia (sugar substitute)
  • 1 tablespoon baking powder
  • 1/2 teaspoon Salt
  • 1/4 cup butter, softened
  • 3/4 cup buttermilk
  • 1 egg
  • Filling-Topping
  • 1 1/3 cups brown sugar
  • 2 tablespoons cinnamon
  • 6 tablespoons butter, melted
  • 1/8 cup chopped nuts
To make cake combine dry ingredients. Mix butter, egg and buttermilk together and add to flour mixture. Spread half of the batter in a 9x9 baking pan. Sprinkle half of the filling on top of the batter. Spoon remaining batter on top of filling and cover with rest of brown sugar topping. Bake 350° 25-30 min. This cake is best when eaten the day it is made.
