Peach Almond Muffins Recipe

Ingredients
  • 1 can sliced, drained peaches or 1 1/2 cups fresh peaches (16 ounce can)
  • 1 1/2 cups flour
  • 1/2 teaspoon Salt
  • 1/2 teaspoon baking soda
  • 2/3 cup sugar
  • 2 beaten eggs
  • 1/2 cup vegetable oil
  • 1/2 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 1/2 cup sliced, toasted Almonds
Directions
I like to dice the peaches. Combine all dry ingredients. Add all wet ingredients until moistened. Spoon batter into greased muffin pan or use paper baking cups in a muffin pan, filling 2/3 full. Bake at 350°F for 20 minutes or until done. Makes 12.
