Coconut Pie 4 Recipe

Ingredients
  • 1 cup Sugar
  • 3 egg yolks (save whites for meringue)
  • 3 tablespoons corn starch
  • 2 cups milk
  • 1 cup Coconut
  • 1 teaspoon vanilla
  • 1 tablespoon butter
  • dash of salt
  • 1 pie crust
Directions
Mix sugar and cornstarch in small bowl. In separate bowl, whisk egg yolks and 1 C milk; gradually add mixture to sugar. Add coconut and remaining milk. Cook until thick; remove from heat and add butter, vanilla and salt.

Pour into pie shell.

Meringue

3 egg whites

2 T powdered egg white

2 T warm water

1 pinch cornstarch

1/4 C powdered sugar

Beat until mixture forms stiff peaks. Spoon meringue on hot pie filling.

Bake 15 minutes at 350°.
