| | Directions | | Mix sugar and cornstarch in small bowl. In separate bowl, whisk egg yolks and 1 C milk; gradually add mixture to sugar. Add coconut and remaining milk. Cook until thick; remove from heat and add butter, vanilla and salt. Pour into pie shell. Meringue 3 egg whites 2 T powdered egg white 2 T warm water 1 pinch cornstarch 1/4 C powdered sugar Beat until mixture forms stiff peaks. Spoon meringue on hot pie filling. Bake 15 minutes at 350°. |
