Sweet Basil and Spinach Penne Recipe

  • 1 package Primio Sweet Basil Sausage
  • Olive oil
  • 3 garlic cloves , chopped
  • Dried basil
  • 2 or 3 fresh ripe tomatoes
  • 1 package penne pasta
  • 1 package frozen chopped spinach, thawed
  • 2 cups chicken stock
  • Salt and pepper to taste
  • Grated Romano cheese
  • Bring large pot of water to boil for penne; cook and drain.
  • At the same time, in a non-stick saute pan, brown the sausage on both sides; then remove and cut into portions.
  • Continue to cook sausage, add garlic, large pinch of dried basil, and 1/4 cup olive oil.
  • When garlic is translucent (1-2 minutes) add chicken stock. Bring to a boil.
  • Add spinach and let simmer until pasta is done.
  • Add sauce to pasta and stir.
  • Serve with fresh, chopped tomatoes, and Romano cheese.
