White Chocolate Raspberry Muffins Recipe

These wonderfully moist muffins, loaded with juicy raspberries and chunks of white chocolate, are perfect for breakfast, afternoon coffee, or as a terrific dessert.
Directions
  • Preheat oven to 400°F. Place paper liners in a muffin pan.
  • Beat egg in a medium mixing bowl with a hand mixer.
  • Stir in the biscuit mix, milk, vanilla, oil and sugar until smooth.
  • Hand stir in the white chocolate chips and the fresh raspberries.
  • Fill the muffin cups 2/3 full with the batter and bake for 15 minutes or until golden brown.
  • Remove to a wire rack and allow to cool completely.
  • Melt 1/2 cup of white chocolate chips in a microwave for approximately 30 seconds. Stir until smooth.
  • Drizzle the chocolate over each muffin.
