Sweet Raisin Corn Pone Recipe

Ingredients
  • 1 cup stoneground yellow cornmeal, finely ground
  • 1 cup stoneground white cornmeal, finely ground
  • 2 cups boiling water
  • 2 teaspoons salt
  • 1 cup brown rice flour
  • 1 cup soy flour
  • 1 teaspoon baking soda
  • 1 teaspoon xanthan gum (optional)
  • 1 cup Sugar
  • 1 1/2 cups sour milk or buttermilk
  • 2 eggs or equivalent
  • 1 cup Sun Maid raisins
  • 1/2 cup sour cream
Directions
1.) In a lg mixing bowl, combine first four ingredients (cornmeals, water, salt) Stir well, cover, let stand 45 minutes

2.) Add remaining dry ingredients (flours, soda, xanthan gum & sugar), Stir

3.) Grease generously 9 inch iron skillet w/ solid shortening.....ie Crisco and put into 350F oven

4.) Add milk & eggs to dry ingredients, stir. Then using electric mixer, beat 2 or 3 minutes or til smooth

5.) Stir in raisins

6.) Add sour cream by dropping onto top of batter & gently folding into batter

7.) Remove hot skillet from oven & pour batter into it. Return to oven, bake 35-38 minutes or til golden brown & done, check for doneness using a toothpick (if it comes out clean & sides of pone have pulled away from skillet, its done)

* Cool in skillet on a wire rack for 20-25 minutes, turn out gently

** Serve warm w/ butter & your favorite jam or jelly

*** Serve cold w/ butter & thinly sliced Tavern ham
