To Prepare Slaw:
  • In a small food processor or blender, combine chipotle peppers, lime juice, and 1/2 teaspoon salt. Process until smooth. Place in a medium sized bowl and mix in cilantro, sour cream, and mayo.
  • Shred jicama with a hand held grater. Add jicama to bowl, and toss to combine. Cover and refrigerate until ready to use.

To Prepare Burgers:
  • In a medium sized bowl, combine salsa, garlic, chili powder, 1/2 teaspoon salt and black pepper. Add beef and beans; mix together. Shape into six equally sized patties.
  • Grill burgers for 10-13 minutes, or until cooked through, turning once while cooking.
  • Serve immediately with slaw on top of burgers.
With a hint of spice and wonderful texture from the black beans, this Cuban sandwich is topped with a jicama slaw for a sweet, crunchy, delicious burger known in the Carribean as a chimichurri or slaw burger.
