Coleslaw with Lime & Cilantro Recipe

Ingredients
  • COLESLAW:
  • 16 ounces coleslaw mix
  • 1/2 cup lightly packed cilantro leaves, coarsely chopped
  • 1/2 cup sweet red pepper, chopped
  • DRESSING:
  • 1/4 cup canola oil
  • 3 tablespoons fresh lime juice (approximately 1 lime)
  • 3/4 teaspoon ground cumin
  • 1/2 teaspoon salt
  • Freshly ground black pepper
  • GARNISH:
  • Sliced almonds, if desired
Container: serving bowl
Directions
  • In a serving bowl, combine coleslaw mix, cilantro, and red pepper.
  • In a separate small bowl, blend together oil, lime juice, cumin, salt, and pepper. Pour dressing mixture over coleslaw mixture.
  • Cover and chill 1 to 2 hours before serving.
  • Garnish with sliced almonds, if desired.
