Servings: approximately 1/4 pound per person - 1/6 of each loaf.
Ingredients
2 pounds ground baked ham
1 pound ground pork sausage
3 eggs-slightly beaten
2 cups gluten free, wheat free bread crumbs
(approximately 4 sliced of gluten free, wheat free bread)
1 sweet onion - chopped
8 ounces tomato sauce
1 tablespoon spicy brown mustard
1/3 cup brown sugar (packed)
1 tablespoon mustard (prepared or spicy)
1/4 cup cider vinegar
1/2 cup catsup

Preheat oven to 350°
Coat inside of pan with vegetable cooking spray.
In a food processor, grind ham until desired consistency. Also process bread until it resembles coarse crumbs, if you do not have wheat free gluten free bread crumbs already.
Mix ham, pork sausage, eggs, bread crumbs, onion, mustard, and tomato sauce together until completely combined.
Form into two loaves in prepared baking dish.
In a small bowl, combine glaze ingredients and pour evenly over each ham loaf.
Bake 50-60 minutes. Let cool slightly before serving.
Leftovers make great sandwiches.
For easy clean up, line baking dish with foil and coat well with a vegetable cooking spray.
