Ingredients
3 eggs
1 3/4 cups white sugar
1 cup vegetable oil
2 teaspoons vanilla extract
2 cups zucchini, peeled and grated
1 cup nuts (walnuts or pecans)
1/2 cup mini chocolate chips
1 tablespoon fresh lemon zest
3 cups all-purpose flour
1/4 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1 teaspoon ground nutmeg

Preheat oven to 350ยบ F. Grease and lightly flour bread pans.
In a medium bowl, mix together flour, baking powder, baking soda, salt and spices. Set aside.
In another large bowl, beat eggs until light in color. Gradually add sugar and continue beating. Stir in vanilla, zucchini, oil, nuts, chocolate chips and fresh lemon zest.
Fold in dry ingredients until combined and then pour batter in 2 prepared bread pans.
Bake 50-55 minutes or until done. Remove bread from pans to cool.
