Mixed Vegetable Mornay Recipe

  • 2 packages frozen mixed vegetables (10 oz pkgs)
  • 3 tablespoons butter
  • 3 tablespoons flour
  • 1 1/2 cups milk
  • 1/2 teaspoon Salt
  • 1/8 teaspoon white pepper
  • 1 sharp cheddar cheese, shredded (1/2 C. 2 ounce )
  • 1/2 cup grated Parmesan cheese
  • 2 slices bread, torn into soft bread crumbs
  • 2 tablespoons butter, melted
Cook vegetables as directed on package until barely tender. In saucepan melt 3 tablespoons butter. Blend in flour and add milk, stirring and cooking over low heat until mixture thickens. Add salt, pepper, cheddar cheese and Parmesan cheese, stirring until cheese melts. Place drained vegetables in a greased 1 1/2 quart shallow casserole. Cover with sauce. Toss bread crumbs in 2 tablespoons melted butter and sprinkle on top of vegetables. Bake in preheated 400° oven about 10 - 15 minutes or until browned.
