Ingredients
1 onion chopped
1 pound bacon chopped
3 bay leaves
5 juniper berries (optional)
1 teaspoon caraway seed
2 cans kraut or big bag of cold kraut (large cans)
3 teaspoons beef bouillon
2 teaspoons brown sugar
Directions
Rinse and drain kraut. Cut bacon in little squares and stir fry. When bacon is almost done, add chopped onions. As soon as onions are clear, add bay leaves and juniper berries, caraway seeds and beef bouillon and stir all together. Add kraut with a little water and simmer for 45-60 minutes. DO NOT COVER. If kraut is too sour, add more brown sugar during cooking. Make sure there is always enough water in the pot. This is terrific with brats! Remove juniper berries before serving.
