LEMON GLAZED YAMS Recipe

Ingredients
  • 1 can yams (1 lb 13 ounce can)
  • 2 tablespoons butter or margarine
  • 1/3 cup sugar
  • 1/4 cup water
  • 1 teaspoon freshly grated lemon peel
  • 3 tablespoons freshly squeezed lemon juice
Directions
Drain yams thoroughly. In large skillet, melt butter; add remaining ingredients. Briskly simmer, stirring until sugar is dissolved. Add yams; cover and cook over low heat about 20 minutes. Baste several times to glaze yams well. Pour any remaining glaze over yams and serve hot. Yield: 4 servings.
