MEDITERRANEAN PENNE PASTA Recipe

Ingredients
  • 1 package uncooked penne pasta
  • 1/3 cup olive oil or spread with olive oil
  • 3 tablespoons chopped ripe olives
  • 3 cloves garlic
  • 1 tablespoon capers
  • 1 can petite, diced tomatoes, drained (14.5 ounce can)
  • 10 fresh leaves basil thinly sliced, 1/4 cup
Directions
Cook pasta, cover to keep warm.

Melt oil on med-high heat. Add olives, garlic and capers, stir. Cook 30 seconds, or until garlic is golden brown, stirring constantly. Add tomatoes, stir. Reduce heat to med-low, simmer 5 minutes stirring occasionally. Add pasta and basil, toss lightly, cook until heated through, stirring occasionally.
