Spaghetti Squash Latkes Recipe

Ingredients
  • 1 spaghetti squash
  • 1 onion, grated
  • 2 Eggs
  • 1/4 oat bran
  • 1 1/2 teaspoons salt
  • 1/2 teaspoon black pepper, to taste
Directions
Pierce squash in several places with knife or fork. Cook whole squash for about 10 minutes in microwave, until tender. Alternatively, you can slice the squash in half, place face down in a baking pan and bake for 30- 40 minutes at 375°F.

Let squash cool for several minutes, then remove seeds and scoop out squash. Mix with remaining ingredients. Coat skillet with vegetable spray or oil and drop mixture by spoonful into pan. Brown well on both sides.
