PASTA FAGIOLI SOUP 4 Recipe

Ingredients
  • 12 ounces Healthy Choice sausage (or any kind you like)
  • 3 cups fat-free chicken broth
  • 1/2 cup small shell pasta, uncooked (or any type pasta)
  • 2 cups zucchini, cut and sliced into quarters
  • 1 can stewed tomatoes (plain or Italian style), undrained (14.5 ounce can)
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 can kidney beans, rinsed and drained (15 oz. can)
  • 1/3 cup shredded Asiago cheese
Directions
Heat a large saucepan over high heat. Add sausage and cook until browned, stir frequently. Add the broth and the pasta. Bring to a boil. Cover, reduce heat and simmer 4 minutes. Add the zucchini and tomatoes. Bring to a boil. Cover, reduce heat and simmer for 2 minutes. Still in basil, oregano and beans. Cover and simmer for 3 minutes or until pasta and zucchini are tender. Serve. Sprinkle top with cheese.
