SHRIMP GUMBO 6 Recipe

Ingredients
  • 6 slices bacon, diced
  • 1/3 cup bacon drippings and oil
  • 1 onion, finely chopped (large)
  • 1 1/2 stalks celery, chopped finely
  • 3 cloves garlic
  • 2 cans tomato sauce (small cans)
  • 1/2 pound ham, cubed
  • 1 1/2 packages sliced okra (4 ounce pkg)
  • 3 pounds shelled shrimp, cooked
  • 1 1/4 teaspoons salt
  • 1 each pepper and Worcestershire sauce (1 teaspoon each)
  • Parsley
  • 3 bay leaves
  • Green onions
Directions
Cook bacon and remove. Add oil to bacon drippings; sauté onion and garlic. Add tomato sauce and celery. Cook until all water is absorbed and sauce begins to boil. Add cubed ham, bacon, okra, shrimp, salt and pepper. Cook over medium heat. Occasionally turn contents slowly to prevent sticking. When contents settle, cover with about 1 quart boiling water. Add parsley, bay leaf, Worcestershire and green onions. Bring to boil, simmer slowly for approximately 2 hours. Serve over rice. Serves 4-6.
