Vegetable Beef Stew with Barley Recipe

A warm and comforting stew that gets better the longer it simmers. Serve it with some baking powder biscuits with honey. You can add your favorite vegetables to the pot based on your own personal preference.

  • 2 pounds stew meat
  • 1/4 cup butter
  • 3 quarts water
  • 6 cubes beef bouillon
  • 2 bay leaves
  • 1 teaspoon pepper
  • 1 tablespoon salt
  • 1 1/2 cups carrots, sliced
  • 3 potatoes peeled and cubed
  • 1 cup celery, sliced
  • 1 cup onion, diced
  • 1/2 cup barley

Brown meat in butter.

Add all other ingredients. Simmer in crock pot on low for several hours or cook in a large pot on the stove over low heat for 2-3 hours.
